Have you ever seen the movie Friday? The one with Ice Cube that takes place in California? For some reason when I hear Rancho Cucamonga, or just Cucamonga I immediately think of that movie. Anyway, the reason for the random movie reference is because I recently received some rubs from a company called Cucamonga Cattle Co., and that name brought me right back to the movie.
I received two really incredible, but totally different, BBQ rubs from them: Prairie Dust and Double Barrel. First let’s start with Prairie Dust. I LOVE this rub, and yes it deserves every capital letter. The second you open it you are literally smacked in the face with the scent of Thanksgiving. To me, sage has a very distinct smell, and that smell is Turkey Day stuffing, and that’s exactly what I immediately got upon smelling this rub. The label just says salt, spices, onion, paprika and garlic, but when I asked them what the spices were they said “sage, rosemary, thyme, bay, all the good ones”.
Vegetables seemed like the perfect food to try first with this rub, so I cut up some yellow squash and zucchini, dusted them with the rub and got them on the pellet grill. I don’t want to say a little goes a long way, because you want a nice coating, but you really don’t need to douse your veggies with this rub to get the glorious flavor it provides. My veggies tasted bright, herbaceous, and downright delicious. This is the kind of rub you can use with veggies, chicken fish and baked goods like savory breads, or your Thanksgiving stuffing. I am telling you right now, this is going in my stuffing this year. This is a savory rub through and through, but not overly salty and not spicy at all. It’s honestly like nothing I have ever tried before.
From Cucamonga Cattle Co.:
Our Prarie Dust dry rub is the perfect poultry rub. Use on poultry, pork, or vegetables. It even enhances potato or macaroni salad. Apply generously to meat (get it under the skin!), sprinkle a couple of tablespoons on vegetables and roast in the oven, and bring the prairie home!!
Next up is the Double Barrel BBQ Rub. This is also a savory rub, but this is more like what you would expect from a rub. It still has a very unique flavor profile, making it different than any other one in my pantry, but has more similar notes to rubs I use often. I first tried this on fish, and now it is my go-to rub anytime I cook a piece of white fish. It has such a wonderful flavor with hints of garlic, onion, paprika, Worcestershire, and brown sugar, that it really made the fish shine. I have used this on pork, veggies and chicken too and it has been a crowd pleaser every time. This is not a sweet or spicy rub, it’s just a perfect savory rub, with a hint of sweet, that has so far worked on everything I have put it on.
From Cucamonga Cattle Co:
Double Barrel gives you a sweet & savory flavor on all your BBQ meats, and is exceptionally good on pork. Use it on any cut for an incredible flavor that will make you beg for more! Apply generously and let it go to work as it becomes your go-to rub for everything you cook.
These two rubs from Cucamonga Cattle Co. are so versatile, I think they would be a great addition to any spice cabinet. I also really liked that the two rubs stand on their own, they are completely unique to each other, and really to any rub I have ever tried. I seriously can’t wait to use the Prairie Dust this Thanksgiving!
I want to thank the people at Cucamonga Cattle Co. for sending me these rubs to try, and I hope you all like them as much as I do. For more information on the company, including where to buy these rubs, please visit their website www.cucacattleco.com.
